I think the tabs that you call ground on the radiosonde is actually the quarter wave counterpoise for the 1/4 wave antenna.

You should check the interference of the ecg project against devices that are not in the same loop as the ecg. You're closing a loop between the test leads the oscilloscope and your hand arm sensors etc etc..

Put the destroyed radiosounde together and look at its output on the spectrum analyser. More interesting that way

I recall seeing plenty of strip line inductors and coupling sections in rigs published in ARRL (American Radio Relay league) books since the early 70s. This was a very common technique when building higher VHF and UHF amateur equipment.

The body has capacitance from damn near everything and I doubt that there's no common mode reject since it looks like one lead and no ground.
to get a nice ECGyou are supposed not to move your body as your will generate varying muscle potentials wich inevitably will overlay with your heart-potentials. and even as your heart-potentials are much more intensive as the signals from your sceletal muscles you still get quite some noise. the signal you got on screen looked pretty decent to me
I remember back in the '90 when I used to work in an ER even bystanders were not allowed to move when an ECG for diagnostical purposes was recorded
